Breakfast Cookies

2 ripe bananas, mashed (bananas MUST be ripe!)
2 1/2 cups uncooked rolled oats
1 cup nut butter or sunflower seed butter
1/3 cup raw honey OR real maple syrup
1/2 cup raisins
1/2 cup nut pieces
1/2 tsp. real vanilla extract
1/2 tsp. cinnamon
1/4 tsp. Celtic sea salt (fine grind)

Line a baking sheet with parchment paper and preheat oven to 350º F.  Combine all ingredients until thoroughly combined.  Spoon out bite-sized portions and roll into balls.  Press down slightly  to flatten into a cookie.  Cook for 20 minutes; remove and allow to cool before enjoying with a cup of hot herbal tea!
