Sweet Potato Bowl

2 large sweet potatoes, diced
2 tablespoons olive or avocado oil
1 tsp. chili powder
1 tsp. cumin
1 tsp. garlic powder
Juice of 1/2 lime
Celtic sea salt and freshly-ground black pepper to taste
1 can Eden brand black beans, rinsed and drained
1/2 cup best guacamole ever
1/2 cup salsa
chopped salad greens of choice
 1/4 cup cilantro, chopped
2 cups cooked quinoa

 

Preheat oven to 375ºF.  Place sweet potatoes on a parchment-lined baking sheet. Drizzle with oil, then add chili powder, cumin, garlic powder, lime juice, Celtic sea salt and pepper to taste. Toss to coat well. Bake for 20 minutes, or until soft.

Assemble bowls by arranging cooked sweet potatoes one one side, then add (clockwise around the bowl) quinoa, black beans, salsa and guacamole. Enjoy immediately.
