Super-scrumptious Superfood Snacks

2 tsp vanilla                                    
2 tsp cinnamon
1 cup chopped almonds or pecans               
1 cup chopped walnuts
1 cup cacao nibs        
1 cup raw pumpkin seeds                
1/2 cup goji berries (hydrate with a few drops of water if needed)
2 cups gluten-free oats                                
2 tbsp ground chia seeds
1 cup raw, unfiltered honey                         
1/2 cup coconut oil, warmed
1/2 cup almond butter                    
1/2 tsp finely ground Celtic sea salt

Add honey, almond butter, sea salt, vanilla, and cinnamon to coconut oil and simmer over low heat until incorporated.  Remove from heat and allow to cool a bit.  

Combine all other ingredients in a large mixing bowl and mix wet and dry ingredients together.  Place in a waxed-paper lined pan and refrigerate to set, or keep frozen until ready to eat.  Cut into squares and wrap individually to store in the freezer, or enjoy immediately!
