1½ cups fresh or frozen blueberries
2 cups fresh or frozen strawberries
1 cup coconut milk
Sweet Leaf vanilla creme liquid stevia (or raw honey)
1 tsp vanilla extract
6 ice pop molds
Allow berries to thaw if using frozen. Place blueberries in blender or food processor along with 4 drops stevia and combine until smooth. Pour into one-third of pop mold and place in freezer for a few minutes to thicken.
Combine coconut milk and vanilla extract in blender and combine until smooth. Top semi-frozen strawberry pop with coconut and return to freezer to set.
Place strawberries in blender or food processor along with 4 drops stevia and combine until smooth. Pour into top one-third of pop mold, cover with mold top and place in freezer to solidify.
