Classic Italian Marinara

28-oz. organic diced tomatoes (use glass jar such as Jovial brand)              
handful fresh basil, chopped
1 onion, diced
1/2 carrot, peeled or grated                    
2 cloves garlic, minced
4 tbsp extra virgin olive oil + extra   

Place 1 tbsp oil in a medium sauce pot and heat on low-medium heat. Add onion and sauté until translucent. Add tomatoes, carrot, basil, garlic, oil, Celtic salt and pepper.  Bring to a boil, then let simmer for 20 minutes or more.
