Tri-color Shoestring Fries

2 lbs. tri-color potatoes (mix purple, red bliss, and yellow)
2 tbsp. avocado oil
Celtic sea salt
freshly-ground black pepper
2 tsp. dried rosemary

Preheat oven to 400º F and prepare a baking sheet with parchment paper.

Pass potatoes through small-cube blade of a vegetable chopper (such as chop magic), or cut into thin strips.  Toss in a large mixing bowl with remaining ingredients.  Spread potatoes out on parchment and bake for 30 minutes, or until golden.  Allow to cool slightly before serving.
