Buenos Días Breakfast Burrito

4 eggs, whisked
4 Ezekiel sprouted grain tortillas
1/2 cup cooked black beans
1/2 cup medium salsa
1 tbsp avocado oil
1 ripe avocado, sliced

Possible additions: 
grass-fed cheddar cheese
chopped scallions
chopped parsley or cilantro
diced red onion
chopped spinach
Warm tortillas in oven or toaster just until soft.  Heat salsa and black beans in a medium frying pan over medium-low heat.  Set aside.  In same pan, warm avocado oil.

Add desired "additions" to eggs and scramble 3-5 minutes in avocado oil to desired firmness. Fill warm tortillas with eggs, salsa and beans. Garnish with avocado and enjoy.
