Blistered Shishito Peppers
This is a favorite of tapas-lovers everywhere. I had these delicious mild peppers at the outstanding Spanish tapas restaurant Tia Pol in Manhattan and immediately wanted to try them at home. The recipe could not be simpler.
Celtic sea salt (course grind)
Oil a frying pan and warm over medium heat. Add peppers and toss to coat. Turn peppers periodically and allow to "blister." Add generous pinch of Celtic sea salt toward end of cooking process. Enjoy immediately.
