Zucchini Carrot Squares 

2 grated zucchini
3 grated carrots
1/2 grated onion
1/2 tsp Celtic sea salt
1/4 tsp freshly-ground black pepper
1 tsp Italian seasoning
1 cup gluten-free pancake mix (such as Wholesome Chow)
4 eggs
1/2 cup grated Parmigiano cheese, optional
1/2 cup olive or warmed coconut oil

Preheat oven to 350°F.  Mix all ingredients in a bowl until combined.  Spread mixture onto parchment-lined 13x9 baking dish and bake 25 minutes, or until golden brown. Allow to cool before slicing into squares.
