Sweet Potato & Goat Cheese Wrap

1 sweet potato, sliced longways 1/4" thick
large Ezekiel sprouted-grain tortillas
1 ripe avocado, sliced
goat cheese
mixed baby greens
sprouts (choose your favorite kind)*
warmed coconut or olive oil
Celtic sea salt and black pepper

Preheat oven to 350º.  Brush potato slices with oil and season with salt and pepper.  Bake for 5-10 minutes on each side.  Set aside.

Spread goat cheese on open wrap.  Add greens.  Place sweet potato, avocado, and sprouts on top of greens and roll tightly.  

*Sprouts are a mainstream superfood - they are powerhouses of protein, B vitamins, and trace minerals.  Add them to juices, smoothies, salads, and wraps, especially in the spring, as they also support natural detoxification.  Choose fresh sprouts or, better yet, sprout your own!
