Superfood Fruit Salad
This recipe is perfect for a summertime breakfast, when beautiful fresh berries are in season. Gojis and bee pollen provide complete protein to make this a satisfying and energizing meal or snack.
¼ cup goji berries
¼ fresh pineapple, cubed
½ cup fresh berries (blueberries, blackberries, strawberries, raspberries or a combination)
1 teaspoon bee pollen*
½ cup fresh red or green grapes
Place goji berries in the bottom of a medium bowl. Add pineapple on top of gojis to allow the fresh juice to rehydrate the berries. Top with additional fresh berries and grapes. Allow to sit for 10 minutes, then toss to combine. Sprinkle bee pollen on top and mix gently. Enjoy!
*Bee pollen is a superfood packed with enzymes, complete protein, phytonutrients, and especially B vitamins. It is not recommended, however, for those with allergies to bee stings or bee products. As with all superfoods, start with a fraction of the recommended amount (1-2 granules on tongue to start), so as to allow the body to be come accustomed to the superior nutrition content.
