Quinoa Goji Berry Porridge
This nourishing high-protein breakfast makes 4 servings. If not using all 4 servings at once, refrigerate or freeze cooked quinoa, and reserve goji berries, banana and bee pollen until just before serving.
1 cup quinoa, rinsed
2 cups water
1 cup goji berries, divided into four ¼ cup servings
4 teaspoons bee pollen, divided
2 bananas, sliced and divided into 4 servings (optional)
pinch Celtic salt
Bring quinoa, Celtic salt and water to a boil, then reduce to simmer for 20 minutes. Add goji berries and stir to rehydrate. Top with optional banana and bee pollen.
