Healthiest Pesto Ever

Cilantro and parsley shine as the stars of this dairy-free pesto, chelating heavy metals from the body and boosting overall cleansing and detoxification.  Zinc from pumpkin seeds, minced raw garlic and lemon all support the immune system, and Celtic salt provides 42 trace minerals not easily found in foods.  When you taste this pesto, you'd never guess how unbelievably healthy it is...but beware, it is addictive!

1/3 cup Brazil nuts                         
1/3 cup sunflower seeds
1/3 cup pumpkin seeds                     
1 cup fresh cilantro
1 cup parsley                            
2 garlic cloves, minced
1/2 cup cold pressed olive oil                
4 tablespoons lemon juice
Big pinch of Celtic sea salt and or dulse flakes to flavor

Soak the seeds and nuts overnight.  Process the parsley, cilantro and olive oil in a blender until chopped.  Add the garlic, nuts, and seeds, salt/dulse and lemon juice and mix until the mixture is finely blended into a paste. Store in dark glass jars or freeze.  Toss with chickpeas or zucchini ribbons/pasta, use as a spread on endive leaves, sprouted pita or Mary’s Gone Crackers, or serve as a topping for fish dishes.
