Blueberry Cashew Overnight Oats

1/2 cup almond milk
1/4 cup fresh blueberries
1/4 cup raw cashews, soaked 1 or more hours and rinsed
1/2 cup steel cut oats*
2 tsp chia seeds
1 tsp scraped out vanilla beans (or vanilla extract)
3-4 drops vanilla creme SweetLeaf stevia or 2 tsp maple syrup

Blend softened cashews with the stevia or maple syrup and vanilla in a blender until smooth.  Transfer to a mason jar, adding additional ingredients.  Cover and store in the fridge overnight.  Enjoy in the morning either cold, (not optimal for digestion) room temperature or warmed in a saucepot on the stove.  Feel free to substitute other berries if desired. (Frozen berries would also work, but do thin out the oatmeal).

*oats are naturally gluten-free, but due to cross-contamination issues in factory settings, look for gluten-free oats if you are seeking to avoid gluten
