Sweet Balsamic and Beet Salad

5-6 oz. mixed salad greens, washed and dried
1 tbsp. avocado (or warmed coconut) oil
5 beets, scrubbed and cut into small chunks
3 oz. goat cheese
1/2 cup walnuts
1/2 red onion, cut into thin half moons
1/2 cup cooked chickpeas (optional)
1 large shallot, minced
1 tbsp raw honey
1/4 cup balsamic vinegar
1/3 cup olive oil
Celtic sea salt and freshly-ground black pepper to taste

Preheat oven to 450ºF.  Toss beets with avocado (or warmed coconut) oil and Celtic salt and pepper.  Bake for 30 minutes, or until fork-tender.

Mix shallot, honey, oil, vinegar and salt and pepper in a shaker jar or in a blender.  Pour over mixed greens and toss.  Add roasted beets, red onion, walnuts, goat cheese and chickpeas, if using.
