Pretty Summer Salad

1 cup arugula
1 head radicchio, sliced
1/2 cup fennel, thinly sliced
1 beet, thinly sliced
handful raw walnuts
sprinkle sunflower seeds
handful fresh blueberries

1/2 cup olive oil
1/4 cup apple cider vinegar
2 tbsp dijon mustard
1 clove garlic, peeled

Mix dressing ingredients in a blender until smooth. Arrange arugula, radicchio slices, fennel and beets in a bowl.  Top with dressing and toss to combine.  Top with nuts, seeds and berries and enjoy.
