Kale Avocado and Hempseed Salad     

2 lbs. chopped kale, thick stem removed
½ lb. red onion, diced                
½ lb. red bell pepper, diced
3 avocados, sliced open and pits removed                        
3 oz. lemon juice
2 tsp. Celtic sea salt                    
½ tsp. black pepper
2 tbsp. hemp seeds

Scoop out and mash the avocado with the lemon juice, Celtic salt and pepper with a fork (or on a food processor) until smooth.  Add to kaleand use your hands to massage kale until it is well-coated with the avocado dressing.  Add red onion and pepper and stir thoroughly.  Taste and adjust seasonings.  Garnish with hemp seeds.
