Raw Strawberry Ice Cream 

Inspired by raw food chefs who often use nuts to substitute for dairy, this decadent dessert starts with a cashew base.  Feel free to substitute other fruits or ingredients to create your own new favorite ice cream.
 
1 cup of cashews (soaked in water for 2-3 hours then drained)
1 cup of water                        
1 cup of organic frozen strawberries (or mixed berries)
1/4 cup of raw honey                    
2 tbsp of raw coconut butter
1/2 cup fresh mint leaves or wild edible flowers, plus more for garnish

Blend the soaked cashews with 1 cup of water in a high speed blender for 3 minutes or until VERY creamy (like heavy cream).  Pour the cashew cream into ice cube trays and freeze. In a high speed blender, combine blueberries, coconut butter, honey, 1/2 cup mint or flowers, and frozen cashew cream cubes.  Blend until it resembles soft serve ice cream - about 2-3 minutes. Be careful not to over blend.  Immediately spoon into 4 bowls and garnish with mint and/or flowers.
