Quick Tomato Soup 

6 medium ripe tomatoes                                    
1 tsp minced garlic
6 sun-dried tomatoes                                               
4 stalks of celery                                                
1-2 drops essential oil of basil
1 ripe avocado                                                            
2 tbsp extra-virgin olive oil
Celtic sea salt to taste                                                
water, if necessary

Combine all ingredients except oils and avocado until fully incorporated.  If using a Vitamix, run for 5 minutes to warm, then add avocado, basil and olive oils, and run for 30-60 additional seconds.  If using a blender, add avocado and olive oil to blender, then warm on stove, adding basil oil for last one minute of cooking time.
