Awesome Sauce Bowl (makes 3 bowls)

"Bowls" are the easiest, most versatile healthy meals to prepare.  There are no rules:  feel free to substitute anything in this (or any bowl) recipe with what you have on hand, but know that a yummy sauce is the key to any bowl worth its weight. 

1 sweet potato, cubed
1/2 head cauliflower, cut into florets
wedge of red cabbage, shredded
3 handfuls baby spinach or arugula
1 cup cooked chickpeas
1 cup cooked quinoa or millet
olive oil
cumin
Celtic sea salt
chili powder
hemp seeds (optional)

sauce:
3 tbsp lemon juice
3 tbsp tahini
3 tbsp water
1 clove minced garlic
1/4 tsp chili powder
1/2 tsp Celtic sea salt
3 tbsp fresh minced parsley leaves 

Line a baking sheet with parchment paper and preheat the oven to 350º F.  In one bowl, toss sweet potatoes with 1/2 tbsp olive oil and a 1/4 tsp cumin and Celtic salt.  In a second bowl, toss cauliflower and chickpeas with 1 tbsp olive oil and a 1/2 tsp cumin and Celtic salt. Place sweet potatoes on baking sheet first and allow to cook for 10 minutes.  Add cauliflower and chickpeas and cook for an additional 15-20 minutes.  Remove from oven when both are tender and beginning to brown.

In a small bowl, combine lemon juice, tahini, water, garlic, chili powder and Celtic salt, whisking to combine thoroughly.  Add to a blender or mini food processor and add parsley leaves.  Add water to thin if necessary.

Assemble bowl with all prepared ingredients adjacent to each other in the bowl:  cauliflower and chickpeas, sweet potatoes, shredded cabbage, greens and grains, topped with green sauce.  Garnish with hemp seeds.
