Swiss Chard Sauté

1 large bunch Swiss chard, any variety, washed and ends trimmed
1 large onion, sliced into half-moons
2 tbsp. olive oil
3 cloves garlic, minced
Celtic sea salt
freshly-ground black pepper

Bring a large pot of boiling water to a boil.  Heat 1 tbsp. olive oil in a large skillet over medium-low heat.  Add onions and sauté until browned.    

Cut Swiss chard into 1-inch pieces and drop into boiling water to blanch for 2-3 minutes.  Drain and set aside.

 Add garlic to onions and stir 1 minute.  Add drained chard and 1 tbsp. oil and stir to combine well.  Season to taste with Celtic salt and fresh pepper.
