Stuffed Sweet Potatoes
6 sweet potatoes
avocado or coconut oil
Celtic sea salt and pepper, to taste
1 cup cooked black beans (choose Eden brand if canned)
1 cup shredded organic cheddar or monterey jack cheese
cashew sour cream
diced tomato, red onion, scallion, chives
Preheat the oven to 400ºF. Rub each sweet potato with oil and place in the oven for 30 minutes or until fork-tender.
When the sweet potatoes are done, take them out of the oven and allow to cool to the touch. Cut each one in half and scoop out half of the filling. Set the filling aside (can be used for Easy Peasy Black Bean Burgers, or as a side of mashed sweet potatoes for a later meal).
Sprinkle some of the black beans and cheese on each sweet potato half and place back in the oven to melt the cheese, 3-4 minutes. Remove and add optional toppings.
