Cauliflower Scramble

1 head cauliflower
1 oz. shrimp (1 large shrimp, peeled and tail removed)                       
1 tbsp. ghee or coconut oil or avocado oil
2 tbsp. lemon juice                   
4 garlic cloves, minced
½ onion, diced                        
freshly-ground black pepper                   
Celtic sea salt
3 eggs                           
1 tbsp. goat cheese             
raw sesame seeds for garnish
mixed salad greens

Chop the cauliflower into large pieces and put in the food processor and pulse to chop.  Cut the shrimp into small pieces.  Prepare large frying pan with 1 tbsp. of ghee or oil.  In a large bowl, mix the shrimp, onion, cauliflower, eggs, lemon juice, Celtic salt and pepper. 

Scoop the mixture out and cook on the pan until it is crispy.  Place cooked mixture on top of  mixed salad greens.  Garnish with sesame seeds and goat cheese on top.
