Arugula Pesto (dairy-free)
Arugula pesto

1/3 cup pignoli (pine nuts)
2 cloves garlic, minced
4 cups baby arugula
zest of 1 lemon
1 tbsp. fresh lemon juice
1/4 cup extra virgin olive oil
Celtic sea salt and freshly-ground black pepper to taste

Place all ingredients except olive oil in a blender or food processor and combine thoroughly.  Add oil as blender is running until combined.  Season with Celtic salt and pepper to taste.
